Nan’s Salad with Lobster
My mom makes the best salad and this takes it up a notch by adding some lobster meat. You can also substitute it for your favorite protein or just serve it without. It is delicious either way!
Ingredients -
Romaine Lettuce
Cucumber
Tomatoes
Green Onion
Parsley
Lemon
Olive Oil
Garlic Salt
Pepper
Lobster Meat
Directions -
Chop lettuce, tomato, cucumber, green onion, and parsley
Combine all vegetables in a large bowl
Combine lemon juice and olive (approximately ¼ cup of lemon juice and ⅓ cup of olive oil) with garlic salt and pepper. Mix well
Pour dressing on salad and combine
Add lobster meat on top.
Cast Iron Frittata
This recipe is so easy to make and to customize what you have on hand. Use any vegetable you like - asparagus, spinach, onion, anything! You can also add cheese. The potato crust adds a nice touch.
Ingredients -
12 eggs
¼ cup of milk of your choice
Sweet Potatoes
Bacon
Mushrooms
Red Pepper
Parsley
Salt
Pepper
Directions -
Slice potatoes as thinly as possible.
Chop mushrooms, red peppers, and parsley.
Cook bacon.
Combine eggs, milk, vegetables, and cooled bacon in a bowl. Season with salt and pepper.
Cover skillet in olive oil.
Line the bottom and sides of cast iron skillet (or pan of your choosing) with potatoes.
Pour egg mixture into skillet.
Preheat oven to 375 degrees.
Cook frittata mixture for approximately 45 minutes or until eggs are set in the middle.
Watermelon Cooler
A delicious and refreshing drink that can be enjoyed with or without alcohol!
Ingredients -
Ice
Watermelon (cut up in cubes)
Mint
Lime
Vodka (optional)
Directions -
Blend watermelon ice and mint.
Add vodka if using and blend again.
Pour into cups and top with lime wedge.
