My Easiest Meal Ideas
I have been hearing from a few people that they want more easy and simple meal ideas. So below I am sharing my easiest meal ideas that do not require a lot of ingredients or time. Everything can be adapted to what you have on hand and I often use frozen or pre-packaged vegetables and fruits to cut down on prep time.
Protein Bowl
I have been having this when I want a quick breakfast or even as a dessert. It is delicious and extremely high in protein. You can easily substitute anything to accommodate what you have on hand - sometimes I use nuts instead of cereal or strawberries instead of blueberries. Just ensure that whatever cereal or crunch you add doesn’t have too much sugar in it!
Ingredients -
Greek yogurt
Your favorite chocolate protein powder (this is mine)
Frozen wild blueberries (can substitute any other fruit)
Low sugar cereal
Honey (optional)
Directions -
Mix all ingredients together and enjoy!
Healthy Pasta Primavera
Who doesn’t love pasta primavera when spring comes? This version doesn’t contain any cream and can also be customized to whatever vegetables or protein you enjoy and have at home. If you want to simplify the recipe even more, you could get frozen vegetables to cut down on prep time.
Ingredients -
Pasta of your choice (I like Banza for a gluten free option)
Carrots
Mushrooms
Asparagus
Zucchini
Red onion
Chopped garlic
Olive oil
Parsley
Shrimp (optional)
Parmesan cheese (optional)
Directions -
Chop all vegetables
Heat garlic in a skillet and cook all vegetables and shrimp (if using).
Prepare pasta separately according to box instructions
Add vegetables, olive oil, and shrimp to pasta.
Top with parsley and parmesan cheese and enjoy.
Deconstructed Pork Egg Roll
This has become my favorite dinner when I want something healthy but do not want to spend a lot of time cooking. You can easily substitute the pork for anything else, it is delicious with shrimp as well!
Ingredients -
Pre-packaged broccoli slaw
Yellow onion
Ground pork
Frozen cauliflower rice
Chopped garlic
Soy sauce or tamari or coconut aminos
Hot sauce of your choosing
Mayo
Sesame seeds
Directions -
Chop onion
Heat garlic and onion in a skillet
Add ground pork
Add broccoli slaw
Heat cauliflower rice separately
Mix mayo and hot sauce together
Serve cauliflower rice with pork and slaw mixture. Top with soy sauce, spicy mayo, and sesame seeds.
