Quick & Easy Meal Ideas

We are back with some more of my favorite quick and easy meal ideas. This has been a hotly requested topic, so I hope you enjoy the healthy meal ideas below and they become your favorites as well.

Remember that I do not use precise measurements, so most things are approximate. And feel free to make any changes you want. I would love to hear how you make them your own!

With all ingredients, try to get the highest quality you can find and afford.

Cauliflower Rice

This recipe is very easy to multiply and make for a larger group. You can also find most of these vegetables in the frozen food aisle, which will cut down on prep time. Save yourself the hassle (and the smell) and buy pre-riced cauliflower – worth every penny.

Ingredients –

  • Riced cauliflower

  • Chopped garlic

  • Carrots

  • Yellow onion

  • Peas

  • Scallion

  • Two eggs

  • Tamari (gluten free soy sauce) or regular soy sauce or coconut aminos

  • Coconut Oil

  • Ground ginger, salt, pepper

  • Optional: additional protein – I like to add frozen shrimp

Directions –

  • Chop onion and carrots

  • Heat up coconut oil and garlic

  • Add onion and carrots and cook until tender

  • Add peas and cauliflower

  • Create a hole in the middle of the rice, add eggs, and cook until done

  • Add tamari, ginger, salt, and pepper and mix well

  • Serve with chopped scallions on top

  • Note: do not cook cauliflower too long, can get mushy

Taco Bowl

One of my favorite meals when I am in a hurry. As much as I love a good Chipotle bowl, I am confident that mine is better (and healthier!). You can add quinoa if you would like some additional carbohydrates or crumble some tortilla chips on top for added crunch.

Ingredients –

  • Grass fed beef

  • Yellow onion

  • Black beans

  • Romaine lettuce

  • Tomato

  • Jicama

  • Avocado or guacamole

  • Scallions

  • Cilantro

  • Salt, pepper, cumin, garlic salt, chili powder

Directions –

  • Cook beef with spices and set aside

  • Chop yellow onion

  • Rinse and drain black beans  

  • Heat black beans with yellow onion

  • Chop vegetables

  • Layer beans, beef, and toppings
