Chilaquiles 

Chilaquiles are one of my favorite splurge breakfasts and I was very excited when I found a recipe for a healthier version. This is adapted from a recipe from Siete foods. I use their chips and enchilada sauce, but use whatever brands you like.

Ingredients - 

  • Chips

  • Green enchilada sauce

  • Black beans

  • Tomatoes

  • Green Onion

  • Avocado 

  • Cilantro

  • Eggs

Directions - 

  • Chop tomatoes, green onion, avocado, cilantro 

  • Rinse black beans

  • Heat enchilada sauce in a large pan

  • Add chips and gently mix

  • Remove from heat and add black beans, tomatoes, green onion, and cilantro

  • Cook eggs over easy and add on top of chip mixture

  • Serve and enjoy!

Sweet Potato Scramble

This is my go-to breakfast to make when I have extra time in the morning. The combination of complex carbs, protein, and healthy fat will keep you full for hours. It is also easily adaptable to what you have on hand.

Ingredients - 

  • 1 sweet potato

  • ½ yellow onion

  • 2 eggs

  • Handful of arugula 

  • 5 grape tomatoes

  • ½ avocado 

  • Olive oil

  • Salt 

  • Pepper

Directions - 

  • Grate sweet potato 

  • Chop onion

  • Heat olive oil

  • Cook sweet potato and onion

  • Add a handful of arugula and tomatoes

  • Crack eggs over the hash, add salt and pepper, and mix until eggs are cooked through

  • Add avocado on top and enjoy!
