Super Bowl Recipes
Are you going to watch the Super Bowl?
I imagine you are since nearly 75% of Americans typically tune in for the big game.
As a Patriots fan, I will admit that I am not quite as excited about this game as I have been in the past. But of course I will still watch and will probably be rooting for San Francisco since I have so many friends who are big Niners fans.
Food is an integral part of any Super Bowl gathering, and this week I am sharing three recipes that will be perfect whether you are intently watching by yourself at home or getting together with friends just to see how many times that will show Taylor Swift.

Mediterranean Dip
Ingredients -
Hummus
Tzatziki
2 small or 1 large cucumber
10 grape tomatoes
½ red onion
Feta cheese
Handful of pine nuts
Directions -
Dice cucumbers, tomatoes, and red onion
In a serving dish, layer hummus, tzatziki, cucumbers, tomatoes, red onion, crumbled feta and pine nuts.
Garnish with parsley and serve with pita chips and crackers
Chili
Ingredients –
2 packages of organic ground turkey (beef works too, can also omit meat altogether)
2 containers of kidney beans
2 containers of black beans
2 yellow onions
2 red peppers
2 green peppers
Can of tomato paste
2 cans of crushed tomatoes
Garlic
Chili powder
Garlic powder
Cumin
Salt
Pepper
Guacamole
Green onion
Salsa
Directions -
Chop onions and peppers
Sauté garlic with onions
Add chopped peppers and cook for a few minutes
Add ground meat and cook until nearly done
Rinse beans and add
Add can of tomato paste and crushed tomatoes
Add chili powder, garlic powder, cumin, salt, pepper (and any other spices)
Bring to simmer and cover
Let cook for 30-45 minutes
When done, serve with guacamole, green onion, and salsa (or whatever other toppings you would like)
Sweet Potato Chips
Ingredients -
Two large sweet potatoes
Salt
Pepper
Garlic Salt
Olive Oil
Directions -
Preheat oven to 300 degrees
Thinly slice sweet potatoes into thin slices
Toss sweet potato slices with olive oil, garlic salt, salt, and pepper until thoroughly coated
Layer slices on a baking sheet in a single layer
Bake until crisp and golden brown - approximately 30 minutes. Watch them closely! They will quickly go from crisp to burnt.
