Pumpkin Recipes
Pumpkin Chili
Pumpkin is not just for sweet recipes, I love using it for savory recipes as well. This is my second chili recipe (you can find the first one here) and this one adds pumpkin and does not have any beans. The pumpkin makes the chili a little thicker and adds a unique twist - and no it will not taste like pumpkin pie.
Ingredients -
1 can pumpkin puree (not pumpkin pie puree)
2 yellow onions
2 yellow peppers
2 red peppers
1 can of tomato puree
2 cans of crushed tomatoes
1 package of organic ground turkey
1 package of organic ground beef
Garlic
Salt
Pepper
Cinnamon
Cumin
Chilli Powder
Green Onions
Avocado
Directions -
Chop onions and peppers
Sauté garlic with onions
Add chopped peppers and cook for a few minutes
Add ground meat and cook until nearly done
Add pumpkin, tomato paste and crushed tomatoes
Add chili powder, cinnamon, cumin, salt, pepper (and any other spices)
Bring to simmer and cover
Let cook for 30-45 minutes
When done, serve with green onion and avocado
Pumpkin Energy Balls
This recipe can be easily customized based on what you have on hand and what you are in the mood for - you can use any kind of nut butter, add chopped nuts, chia seeds, or chocolate chips, add honey or maple syrup if you want added sweetness - you get the idea. Be creative and let me know what you come up with!
Ingredients -
½ can of pumpkin puree (not pumpkin pie puree)
1 cup ground flax seed
1 cup unsweetened shredded coconut
5-7 pitted dates
2 large spoonfuls of cashew butter
Cinnamon
Nutmeg
Directions -
Soak dates in warm water for about 10 minutes
Add all ingredients (including dates) to food processor or high speed blender and mix
Add additional pumpkin/nut butter or flax seed/coconut as necessary
Once the dates are fully chopped and the mixture is like dough, remove from blender/food processor and form into balls
Put them into the refrigerator or freezer for at least 20 minutes to harden
