Chicken Burgers with Sweet Potato Chips 

I love making chicken burgers when I feel like a burger but want something other than beef. Sweet potato chips are a favorite side of mine to make – just make sure you watch them closely as they can burn easily - I have set off a couple fire alarms that way.

Ingredients –

  • Ground chicken

  • Parsley

  • Romaine hearts

  • Red onion

  • Avocado

  • Sweet potato

  • Olive oil

  • Salt and pepper

Directions –

  • Chop parsley

  • Combine parsley with ground chicken and salt and pepper in a bowl

  • Form burgers and cook

  • Slice sweet potato as thinly as possible

  • Mix sweet potato with olive oil and salt and pepper

  • Place sweet potato in a layer on a cast iron pan or skillet over medium high heat

  • Turn sweet potato chips as necessary and remove once they turn brown

  • Serve burgers in romaine lettuce hearts with assorted toppings and sweet potato chips  

Thai Shrimp Curry 

I was really craving some takeout one night and instead tried to make my own dish. This was the result and it has become a staple in my rotation now. It is also very easy to modify and add different vegetables or proteins. 

Ingredients - 

  • Shrimp (I like to use frozen, wild shrimp)

  • 1 onion

  • 1 bunch of carrots

  • 2 bell peppers (I like to use red but can use whatever appeals to you)

  • Unsweetened coconut milk

  • Red curry paste (I use this one from Whole Foods)

  • Cashews

  • Cilantro 

  • Cauliflower Rice

  • Coconut oil

  • Salt 

  • Pepper

  • Ground ginger 

Directions - 

  • Thaw shrimp, cook as directed, and set aside

  • Cook cauliflower rice and set aside 

  • Chop onion, pepper, and carrots

  • Heat coconut oil with veggies 

  • Add coconut milk and red curry paste to taste 

  • Add salt, pepper and ginger to taste

  • Add shrimp and simmer

  • Serve with cauliflower rice, cilantro, and a handful of cashews
